This Sun-Dried Tomato Artichoke Pizza was quite the treat! I just love making pizza. These pre-made pizza flatbread crusts make for the easiest quick and delicious dinner, lunch, or appetizer ever! I love that these flatbreads feel slightly elegant and fancy, but yet are so simple to make.
Lately, I cannot get enough artichokes. They’re like my new found love. Salty and savory slightly crispy on top of pizza or grilled in a wrap is soooo good. One of our favorite restaurants serves these Stuffed Artichoke appetizers and I keep meaning to try and make those. They take a whole artichoke and somehow stuff it with mozzarella cheeses and it’s lightly breaded served with marinara. Ohh yum!
I found this sun-dried tomato pesto sauce that I bought with no purpose in mind… then as I was scanning the fridge for dinner ideas the thought that paired with goat cheese and artichokes was a must try!
The boys aren’t quite this adventurous yet to try artichokes, but that’s ok. Not every meal has to be about them ;). But, seriously it is very simple to make another flatbread more basic for the kiddos with just mozzarella and pepperoni or whatever they like.

I hope you enjoy this delicious flatbread recipe! As usual so many of the ingredients are optional, so if you’re not a big fan of one of them you can always substitute!
Sun-dried Tomato and Artichoke Flatbread
Tasty little flatbread for any occasion.
- 1 rectangle shaped flatbread any shape will do, or can make your own crust if you would like
- 1/2 cup sun-dried tomato pesto
- 1/2 cup mozzarella cheese shredded
- 1/4 cup goat cheese crumbles
- 1/4 cup artichoke quarters roughly chopped
- ~10 cherry tomatoes cut in 1/2
- 1 tsp italian seasoning
- handful parsley or bail
Preheat oven to 425 degrees F.
Spread the tomato pesto on the flatbread evenly.
Add the cheeses on the pizza.
Add the tomatoes and artichokes to the pizza.
Sprinkle with italian seasoning. Bake for ~15 minutes on baking sheet. I like my crust nice and crispy, if you’re wanting a less crispy crust I would only bake for ~8-10 minutes until cheeses are melted.
Top with chopped fresh parsley prior to serving (optional). Enjoy!!
Black olives would also be very yummy on here! If you aren’t fond of goat cheese, you could use feta or just double the mozzarella.
