Peanut Butter and Chocolate Stuffed Banana Bread

peanut butter and chocolate stuffed banana bread

I keep seeing all of these delicious cream cheese and streusel filled banana bread recipes on Pinterest lately, and it got me thinking… What else can I put inside banana bread?! I have 3 bananas dying on the counter and need to make some banana bread asap! I usually slather my banana bread with peanut butter when the bread is slightly warm so it gets all melty delicious. So, I thought what if we put peanut butter in the middle… and then instantly thought and of course chocolate. πŸ˜‰ This Peanut Butter and Chocolate Stuffed Banana Bread is quite the treat!

When you slice the banana bread you get little pockets of gooey peanut butter and speckles of chocolate sweetness that flirts with the peanut butter. I highly recommend eating this warm as the peanut butter and chocolate are just slightly melted and even more delicious.

As I was making this I had a vision of a Christmas version of some kind of pound type cake/bread with white chocolate chips and globs of raspberry puree. Mmmm I might have to try this for a Christmas brunch. Anyways, totally off subject haha.

We have had a super stressful few days, both boys sick with croup. I am running on minimal sleep here day 4, so I’m just going to keep this short and sweet with this post about my Peanut Butter and Chocolate Stuffed Banana Bread. Poor Griffin has been up the last 3 nights with croupy cough and Kenny and I are just trying to find anything that will help him in middle of night – steam, cold air, cool mist humidifier, tried it all. He even had oral steroid and nebulizer. Really hoping the poor little guy can get a good nights sleep tonight. πŸ™ Fingers Crossed…

I was hoping this bread would kinda brighten his spirits for a few minutes, but he really hasn’t had much of an appetite. He is usually my little side kick and cooking buddy – so I can tell he is really not feeling good if he’s not even up for that.

  • 2 medium sized bananas mashed
  • 1 1/2 cups flour
  • 1 cup brown sugar
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 3 Tbsp peanut butter heated in microwave for few seconds to soften slighty
  • 3 Tbsp chocolate chips

  1. Preheat oven to 350 degrees F

  2. In a medium sized bowl whisk together the eggs, brown sugar, vegetable oil, and vanilla extract. Add the mashed banana and stir until combined.

  3. In a smaller bowl mix together the flour, baking soda, baking powder, cinnamon, and salt. Add the dry ingredients to the wet and stir to combine.

  4. Spray a traditional loaf pan with cooking spray. Put 1/2 of the mix into pan and spread out evenly. Add the peanut butter on top by dropping small spoonfuls evenly around. Mix in with a toothpick slightly. Drop the chocolate chips on top evenly. Add the remaining banana bread mix on top. Spread evenly without disrupting the peanut butter chocolate layer best you can.

  5. Bake for ~35 minutes until golden brown on top and toothpick inserted comes out clean. Let rest for at least 5 minutes before removing. Enjoy!
