This Mediterranean Smothered Slow Cooker Chicken was so delicious and fun to make! And just packeddd with nutrients!

I am definitely going to keep this recipe in mind for those busy Mondays. Set it in the slow cooker in the morning, and then with minimal additional prep when you get home from work you have an awesome homemade meal.

I served mine over zucchini noodles, because well why not add even more veggies! Plus zucchini goes along with that Mediterranean vibe. But you could also use pasta, cauliflower rice, brown or white rice, or even quinoa would be great choices.

I gave the hubs pasta (eye roll) — but I’m working on convincing him that the zucchini noodles would have been just as delicious ;). And the boys got a side of both pasta and zucchini noodles.

But, just FYI by using zucchini noodles this dish is extremely low carb. High fiber , perfect for your weight loss goals.

After I saw how amazing my Mediterranean Smothered Slow Cooker Chicken looked in the crock pot after I added the spinach, I was thinking Mmmm I need to make a soup version of this too! (I’m sure you’ll see that in the near future). The Chicken was so perfectly tender I could have easily shredded it up for a soup type dish I’m sure.

Ingredients

  • 1 tbsp olive oil
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 3/4 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup parmesan cheese shredded
  • 4 each chicken breasts
  • 1/2 tbsp italian seasoning
  • 4 ounces spinach
  • 1/4 cup kalamata olives
  • 6 ounces roasted red peppers drained
  • ~2 cups zucchini noodles or pasta/rice
  • 1/4 cup feta cheese crumbled

Instructions

  1. Add the olive oil to medium size pan. Cook the onion over medium heat ~ 5 minutes. Add the garlic and cook an additional 1 minute.

  2. Add the heavy cream and chicken broth. Bring to boil then simmer for ~ 10 minutes, until slightly thickens. Add the parmesan cheese until melted and sauce is smooth.

  3. Place chicken breasts in bottom of slow cooker. Season with Italian seasoning. Add the cream sauce over top the chicken. Cook on low 6-8 hrs or high ~3-4 hrs until chicken is cooked through.

  4. ~15 minutes prior to serving add the spinach, olives, and roasted red peppers. While spinach is cooking, prepare your zucchini noodles or pasta according to directions. 

  5. Add the zucchini noodles or pasta to your plate, top with chicken breast, and plenty of sauce/veggies. Top with crumbled feta cheese. Dig in!
